Susanne's journey into the culinary arts derived from a love of the performing arts. She was looking for an artistic outlet that didn't include greasepaint & footlights and found it in the world's sauces and sauté pans.
Italy was the backdrop for Susanne's formal culinary training at the acclaimed Apicius Culinary Institute of Florence. Not only did she learn the techniques necessary for a professional career, she became fluent in conversational Italian and began a love affair with wine that continues to this day. Never one to rest on her laurels, she continued her education at the International Sommelier Guild, where she is a candidate for the Sommelier Diploma.
Currently the Executive Chef at Charlotte's HADCO showroom, Susanne conducts cooking demonstrations on the latest kitchen appliances and teaches lively cooking classes that always end with a standing ovation. With a passion for all things food & wine and a presence that hints at her performing past, Susanne is poised to take the culinary world by storm. |

| Fenwick's is a tiny restaurant that has been serving classic comfort food to loyal fans since 1984. Owners Catherine and Don Rabb try to keep their customers happy - which means not changing the menu much in the years they have had the restaurant. That's okay by most, who come expressly for appetizers like cream of potato soup, onion rings and chicken fingers. Entrees include crab cakes, fried oysters, juicy burgers, steak sandwich, chicken salad and chicken-broccoli casserole. Sides include hearty chunks of fresh veggies, fresh fruit and hand-cut fries. The staff is casual and friendly (everyone seems to know most everyone in the place), and if you have to wait for a table you can do so at the small bar. Everything about Fenwick's is homey and comfortable, from the food to the prices and everything in between. |

Chef Gian-Mauro Moscardini was born in Long Island, New York. He moved to Italy as small child and began his journey into the world of food. Under the guidance of his grandmother Gian made his first tortellini. To this day the inspiration of his grandmother's kitchen is in all that he creates. The family moved back to the states when Gian was a young adult. He went on to spend the next few years honing his skills at restaurants in Charlotte and Lake Norman, NC and Las Vegas, Nevada. Under multiple chefs with different levels of education and experience Gian developed a style all his own. |

| Founded in 1992 in Charlotte, Red Rocks Cafe now has two locations, one in Strawberry Hill (Charlotte) and the other in Birkdale Village (Lake Norman). Tom was 14 when he took his first job in the hospitality industry. He went through his five year European apprenticeship in London. From there he went to Paris. He went on to earn a culinary arts degree from Johnson and Wales College in Charleston, SC. Upstream is a natural progression for Tom, considering his passion for fish and seafood. He smiles when he talks about his adaptation of some regionality with his classical French training and love of Asian flavors.
