This was a perfect choice for this dish. The wine's acidity cut through the oiliness of the salmon while the toasty/yeasty flavors complimented the smokiness of the salmon and the fruit blended nicely with the fish flavors. In the end, those tiny scrubbing bubbles cleansed the palate and prepared you for another pizetta.
