The wine's principal focus is on forthright appley fruit and a pleasant, light sweetness underscored by bracing acidity and sufficient toastiness to add quiet complexity and interest. Yeasty impressions in the mouth along with a full foamy mousse are both mouth filling and refreshing.

This was a perfect choice for this dish. The wine's acidity cut through the oiliness of the salmon while the toasty/yeasty flavors complimented the smokiness of the salmon and the fruit blended nicely with the fish flavors. In the end, those tiny scrubbing bubbles cleansed the palate and prepared you for another pizetta.

Marzemino


Mionetto - Il Rosso
This is Aris' pairing for Mucho Berry from The Prickly Pear

Major Grape: Marzemino
Boy, did I get it right this time on the pairing. Mucho berries in the dish, mucho berries in the wine and mucho bubbles to cleanse the palate. This delightful and zesty red sparkling wine comes from the Veneto region in northern Italy. It is not as effervescent as a typical sparkling wine, allowing it to portray a softer, easy going personality. The fruit flavors in the wine are reminiscent of strawberry and cherry and offer a liveliness that steers the wine far away from seeming cloying.
