Bavarian Potato Salad with Red Onion and Poppyseed Palmiers

Ingredients
Yield: 2 Quarts
Preparation
Red Onion & Poppyseed Palmiers
In a 10-inch sautÚ pan heat butter and olive oil until the butter melts.
Add diced red onions, kosher salt, poppyseeds, and black pepper.
Cook until red onions are soft and poppyseeds are toasted.
When onions are soft and tender, remove from heat and cool to room temperature.

Place puff pastry on work surface so that long side faces you.
aSpread half of the onion mixture over the top of the dough.
Fold the long sides in to center so that the edges meet.
Spread remaining filling across top of dough and fold in half lengthwise.
Roll across with rolling pin to flatten slightly.
Cut into _ pin cross-sections and place cut side up on a baking sheet.
Bake at 375 degrees for about 12 minutes.
Remove from oven and cool.
