Mix black pepper and sesame seeds.
Roll tuna pieces in the mixture.
Heat olive oil in an iron skillet.
Sear tuna until desired temperature.
Boil red-skinned potatoes.
Mash the potatoes.
Fold in butter and ginger, white pepper, garlic and salt.
Place potatoes with tuna.
Garnish with wasabi mayonnaise, teriyaki glaze and alfalfa sprouts.
