||Take 2 slices of eggplant. Dip in egg. Cover with bread crumbs and sprinkle with Cajun Seasoning. Heat olive oil in sauce pan. Fry eggplant until golden brown on both sides. Remove from pan and place on paper towels.
Sauté shrimp, crawfish, scallops, sausage, peppers, onion and mushrooms in olive oil. Season with salt & pepper.
Add tabasco sauce, cajun seasoning and tarragon. Deglaze pan with sherry. Add heavy cream and butter. Reduce until thick.
