1/2 cup of baby shrimp 1/4 cup of lime juice 1 tablespoon of tomato diced 1 tablespoon of onion diced 1 tablespoon of avocado diced 1/2 teaspoon of cilantro chopped crushed red pepper extra virgin olive oil salt
In a bowl add the shrimp, lime juice and a pinch of salt and put into the refrigerator over night.
The next day drain the shrimp and put into a bowl. Add tomato, onion, avocado, cilantro. Season with salt and red pepper to taste. Drizzle the extra virgin olive oil over the top. Plate.
