In a mixing bowl combine sweet chile sauce, juice of 1/2 lime, cilantro, soy sauce and hot sauce Add tuna. Rub until completely covered. Set aside. Black Bean Butter Sauce In a blender, mix black beans, chile powder, cumin, granulated garlic, onion powder, salt, and cayenne. Blend until smooth then transfer to small sauce pan. Heat sauce until it starts to bubble. Cut up stick of butter into 4 pieces. While stirring with a whisk add 1 piece of butter at a time, letting them melt before adding the next piece. Make sure to continuously stir so butter does not separate. Lower heat to low and let simmer stirring occasionally while you prepare slaw. Jicama Mango Slaw Peel mango and cut into thin strips. Repeat process with jicama. Put into mixing bowl. Add chopped cilantro, oil, vinegar, and salt & pepper and mix together
Sear tuna in a frying pan turning once per side, 1 minute per turn then flip and repeat on second side. Remove tuna and slice into thin strips.
On a plate, ladle black bean butter sauce, and then place slaw in middle of sauce, fan tuna out over slaw. Garnish with fresh cilantro if desired. |
