Ingredients

10 oz filet cracked black pepper shallots garlic red wine red wine vinegar beef or veal stock pinch of cracked black pepper Cognac heavy cream salt and pepper to taste 1 pre-baked potato green beans olive oil butter. 1 garlic glove chopped salt and pepper juice of 1/2 lemon 1/2 red pepper, julienned

Preparation

|
Dusted filets with cracked black pepper. Grill to a perfect medium rare 5-6 minutes on each side. Allow to rest 2-3 minutes before serving.
Sauté shallots and garlic in olive oil. Add red wine, red wine vinegar, beef or veal stock - preferably homemade, but canned is acceptable - and a pinch of cracked black pepper. Simmer. Add Cognac then heavy cream. Season with salt and pepper. Leave on low heat until ready to plate dish.
Cut pre-baked potato into thin strips. Deep-fry until crispy and golden brown.
Heat sauté pan with equal pans of olive oil and butter. Sauté garlic. Add green beans and red pepper. Season with salt, pepper and juice of 1/2 lemon.
Place filet on plate. Ladle sauce on filet. Place green beans and fried potatoes on plate. |
