||Preheat oven at 450░.
Preheat your vegetable oil in a pan.
Salt and pepper your fish.
Place in a heated non-stick sautÚ pan with 1 tablespoon of olive oil skin side down.
Sear the skin.
Flip and place into the oven and cook for 6-9 min.
In a sautÚ pan, heat olive oil, garlic and anchovies.
Make sure that the anchovies dissolve into the oil.
When the garlic is golden, add the tomatoes, olives, capers and tomato sauce.
Once you have the consistence that you need, remove from heat and add basil.
Heat vegetable oil in a sautÚ pan.
Fry your bread on both sides for about 3 min. then pat dry with a paper towel.
Place your fried bread into a bowl or plate.
Add sauce on top of the bread.
Place your fish gently on top of both.
Drizzle some olive oil on the plate and the fish
Finish with some basil chiffonnade.
