Clean most of the fat away from your beef and dice it small.
Chop garlic, ginger, lemongrass and jalepeno into small pieces.
Grind your star anise in a spice grinder or coffee grinder until fine.
Season your beef with salt, pepper and star anise.
Mix in chopped items.
In large sauté pan cook beef until medium rare.
Let cool for 5 minutes.
Egg wash the wrappers with a mixture of 1 egg and 2 tbs of water.
Place 3 to 4 oz. of beef and 3 tbs. cheese onto your wrapper and roll.
Deep fry for 4 minutes.
Serve with sweet chili sauce.
