||Slice the 6oz. portion of Salmon into 3 even pieces
Season the Salmon with Salt and Black Pepper and set aside
Shave or thinly slice the fennel root and set aside.
Thinly slice the Orange with skin on and set aside
Lay the parchment paper on the prep table, spray with non-stick, and then place the shaved fennel in the center of the paper.
Place 3 to 4 thin slices of oranges on the fennel then lay the 3 slices of Salmon on the oranges.
Press the chopped Candied Ginger on top of the fish.
Place a pad of butter on the Ginger Salmon and pour the White Wine over the Salmon.
Fold in the ends of the paper to form a pouch, twist the top end of the paper and trim the excess with scissors.
Place the pouch in a baking dish and then bake at 400 degrees for about 15 to 20 minutes or until desired doneness is achieved.
To open the pouch - fold down the edges and serve in the pouch with grilled asparagus or desired vegetables.
