Shrimp and Prosciutto Spedini with Tomato Basil Vinaigrette

Ingredients
Yield: Serves 2
Preparation
Vinaigrette
Core tomato and mark an X on the bottom.
Season with olive oil and kosher salt.
Roast in a 350-degree oven for 5 minutes.
Peel tomato skin.
Put tomato in food processor with all of the ingredients except the olive oil.
Process until smooth then drizzle in olive oil.
