Black Eye Pea Hummus with Corn Bread Sticks

Ingredients
Preparation
Corn Bread Sticks
Mix all ingredients together and allow the batter to rest for 3 minutes.
Place parchment paper on a sheet pan and spray it with non-stick.
Pour the batter into a disposable pastry bag and pipe 8 inch sticks onto the parchment and top with parmesan cheese.
Bake in a 300 degree oven for 15 to 20 minutes or until golden brown.
Allow them to cool and serve with the hummus.

Yields Approx. 20ea. 8in sticks
Garnish
Drain and rinse the canned black eye peas and place them in a food processor.
Add Garlic, Tahini, Lemon Juice and puree.
Slowly add the Extra Virgin Olive Oil making sure to scrape down the the sides of the bowl.
Add the Ice and allow pureeing until the cubes are melted.
Season with Kosher Salt and White Pepper.
